Quesadillas (pronounced kay-sah-DEE-yahs)
are a simple, easy Mexican dish. Although you only need cheese,
salsa and tortillas to make one, you can add any number of
other ingredients, including: chicken, pork, beef, beans,
pineapple, mango, avocados, seafood, onions, etc. Just
remember that - except for the cheese - whatever you add to
the quesadilla MUST be pre-cooked (it won't cook inside the
tortillas). Unless you LIKE to eat raw chicken or pork...
freak. Using pre-shredded cheese is easiest, but if you grate
or cut your own cheese, make sure it's not too thick.

4 Quesadillas.
INGREDIENTS
Non-stick spray oil (or butter or cooking oil)
8 flour tortillas (6-8 inches in diameter)
1 cup shredded Monterey Jack (or your favorite)
Totally Chipotle® Party Sauce
METHOD
1.
Put non-stick pan (recommended) over medium-high heat. Regular
skillet works fine, too.
2.
Coat pan well with non-stick spray oil (butter or cooking
oil will also work).
3. Put first tortilla in pan, add cheese & Totally
Chipotle® Party Sauce, put second tortilla on
top.
4.
After a few minutes (or until bottom tortilla is brown), use
spatula to flip quesadilla.
5.
After another 1 - 2 minutes, remove quesadilla from pan &
put on cutting board; use SHARP knife (get parent's permission)
to cut into 4 - 6 pieces. HINT. Cut it
like a pie: down the middle into two halves, then cut the
halves into quarters, etc.
6.
Repeat process with remaining tortillas.
7.
Serve alone, or with sour cream, guacamole. Squeeze lime (or
lemon) on top for extra "pop!"
